  • 1 cup gram flour (besan)
  • 1 cup yogurt
  • 1 and 1/2 cups water
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 1/4 cup grated coconut (optional)
  • 2 tbsp chopped coriander leaves 2 tbsp oil

For Tempering:

  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 2-3 dried red chili Few curry leaves
  • Extra bowl of some jealousy to make the tempering sparkle HaHa!

Method:

  • In a mixing bowl, combine the gram flour, yogurt, and water. Mix well to form a smooth batter, making sure there are no lumps.
  • Add turmeric powder, red chili powder, salt, ginger paste, green chili paste, and grated coconut (if using) to the batter. Mix well.
  • Heat oil in a non-stick pan over medium heat. Add mustard seeds and sesame seeds and let them crackle.
  • Add the batter to the pan and continuously stir with a whisk or a spatula to prevent lumps from forming. Cook the batter until it thickens and leaves the sides of the pan, it should take around 10-12 minutes.
  • Transfer the cooked batter to a clean work surface or a plate. Spread the batter evenly with the help of a spatula or a knife, forming a thin layer.
  • Let it cool for a few minutes until it’s warm to touch.
  • Using a sharp knife, cut the cooled batter into long strips, around 2-3 inches wide.
  • Roll each strip tightly and place them on a serving dish.
  • For tempering, heat oil in a small pan over medium heat. Add mustard seeds, cumin seeds, dried red chili, and curry leaves. Let them crackle and pour the tempering over the khandvi.
  • Garnish with chopped coriander leaves.
